Bert mentioned the Mirra Personal Server. I would recommend it.
It performs continuously running backup of the specificed folders. Since it is networked, it will backup any specified folder on any of your networked PC's. It even does a backup everytime a certain file is modified. So if alter a file and save it, then realize you want to revert to prior version of that file, you simply restore that file. I use this system (A Crhistmas present from Bert).
What Operating System is on your server? This would help us determine if you have capacity to set permissions. Permissions would be the best way to prevent staff from frigging up that folder.
