The server would work absolutely fine for this, except it is best not to run AC on your server, as you have pointed out.
I wasn't aware that the last saved file was saved on your own PC. That's good to know and negates my issue with multiple users trying to resurrect his or her note. Here are my thoughts:

1. I doubt a save feature will ever be built into the program as you shouldn't lose your note due to network disconnectivity. Plus you have the last note backup. I think the best way to save the note is as Brian states, forwarding it to yourself and then opening it again. This is not something one would need to do with a short note. If you are having issues with lost notes, then after opening the note from the Inbox, do not choose to remove it from the inbox. That way you will at the very least have the nurse's input there.
2. While working remotely would work, it simply isn't practical. This in no way is against Brian's idea. It would work, but it is just way too much. You would need one computer for each tablet unless you are happy with everyone using AC in one setup.
3. We have three or four computers which run off the server. AC was not designed that way and seems to be slower. It would still be faster than LogMeIn. But, it would be faster to use AC directly off the server IF you were going to use LogMeIn as it would bypass one step. Again, though, everyone would have to use AC in Mike mode or John mode or Sally mode.
4. This is an exercise in futility, because one should not be losing notes due to nanosecond disconnections. Don't click on anything while you are disconnected.
5. While these are the answers to the question, certainly fixing the underlying problem of wireless issues would be the way to go.
6. While I do not want to offend anyone who likes wireless and the Tablet method (and many do and many have no issues with it), I still think a desktop PC with wired connectivity is the safest and fastest way to go. Just my opinion.
