Certainly Adobe can do anything. It can easily convert .tiffs to pdfs but that seems like an added step that you don't want. I have to admit that is one feature I didn't look at with the Brother, although I am not sure if it is unique to the AIO.
Personally, I wouldn't purchase any fax machine with Fax to PC that can't deliver the fax as a pdf. PDF is the worldwide standard.
