Hello,
Is there a way to sign off ALL the imported items for a single patient without having to open every item?

That I'm aware of, there is not one way to sign off all items on a single patient without opening every item. There is a global signoff to sign off everything in AC but that's it.

If you right click on any item not signed off and click on "Sign off item" a screen will appear with every single item not signed off for that particular patient. However, if you are asking if there is a way to sign off all the items without going through them then I think the answer is no. As Marty mentions there is a global sign off but I have tried it and it does not seem to work.
