You would have to use bootcamp to install windows OS on Mac then install AC on windows partition and then you can run it using vmware or parallels.
I used vmware in the past with decent results.

The easy way is to run AC in a remote session on a Mac, up in seconds.

If you want to use the Macs for charting, you might still want to think about a W7 machine for the 'server'. You could then use Sandeep's post to setup terminal services on the W7 machine. More work, but less than getting OS lic's for each Mac, partitioning, and then having to maintain two OSs on each machine.

I've been running AC on my Mac with Parallels and Windows XP. I use a PC with Win7 as the office main computer. It works fine.

I think Dariusz meant to put an "or" instead of an "and". The bootcamp method would essentially be installing and booting to Windows directly. No different than using a Windows computer. The virtualization method involves using either Parallels or VMware fusion (or some other hypervisor) to run Windows while you're on OSX.
