I would take my preferences and print two extra pages. But, I guess we all have our priorities. Plus we don't use paper. But, I am talking strictly with the letter writer. If you could format after it was previewed you could use things like the View/Hide button to eliminate the extra page. I can't remember how long I used to print extra pages in Word until I realized I could click on the little Hide/Show button (no other name for it) and see about five of those little things crossing over to the next page. Deleting them got ride of the second page. When I or I am sure many people type a letter of more than one page, I always move things up or down or even add a sentence or delete one to make the letter format nicely. I would never send a letter with Regards, on one sheet and my signature line on the next.
