You cannot use SBS 2008 as a Hyper-V host.
If you purchased SBS 2008 with the Premium Add-on, you can use the extra copy of Windows Server 2008 as the Hyper-V host and then virtualize both the SBS 2008 and another copy of Windows Server 2008 to use as the Amazing Charts server. This set up would involve no more license fees as you already have all the licenses you need.
If you do not have the Premium Add-on, you would need to purchase a copy of Windows Server 2008/2008 R2/2012. Your choice.
To be honest, with that much power on your machine, performance should not be an issue. I'd like to take a look at it.
