Does anyone else get an error message when trying to enter SpO2 or pain level in the "more" section of vital signs... I get an error message saying something about spirometry parameters?

No, but since this is the first time I tried it, I don't know how to save it so I can see it. I mean I can save it, but how does it correlate to the date.

When you enter MORE on the vital signs - the note that day will record the information in the vitals (in note).
What version are you using ? One of the problems with AC and the user board is that there are many, many versions in use and people need to say what version they are using with the problems they are having.

I get the same problem. I try to use the pain scale but it will not let me save it without putting in spirometry info.

I think as JB says about how the Orders section has to be redone, the vitals has to be redone.
I think I have a good idea. You know how you are traveling to work and you get this commercial for GoToMyPC or whatever about how everyone can meet there and not travel. Well, how about if JB made committees. Say, there would be a VS committee consisting of specialist, FP, IM and Peds. You meet weekly via GoToMyPC paid for by AC, of course, and come up with ideas as to how VS would work best. There would be a point person (developer) at AC who would overlook the progress mainly to say things like this and that can't be done but should never put in input. When finished, you submit it to AC at least as a template. They, of course, do what works.
I understand what Steven says but right off the top of my head, I would envision just having the first line of VS, then click a down arrow and see the next set. If a pulmonologist or even a primary care doc sees a patient, they want to see and compare the vital signs instantly not go in to the more window. And, we don't need sliders.
