If we are having our staff compose a letter, it automatically signs it from the staff member who is logged in's name. How do we turn that off so that in the template we can use sincerely and my name?
Any thoughts?

There is no way around that other than having them sign in under you and write the letter.
It is designed to say: Sincerely,
Signed in Person

Look in the upper left portion of the letter writer for the "Letter Sections" area. When you want a different signee you can un-click the box that says "Include signature". Now there is no closing or signee in the letter. You can add the one you want in a template.

That works great! Thanks for the solution, now is there anyway to make it so it isn't defaulted to have the signature in there?

Sorry, but I don't think so.
