You should be able to scan to PDF and import the items into Amazing Charts. Adobe reader is integrated in Amazing Charts, you can adjust the zoom in there, there's even a fit to window button.

Also I recommended the second scanner if you needed a TWAIN driver. But scanning to PDF works too. That's what we do.
