In the Print Immunizations screen, is there a way to make it print the vaccine name instead of the brand name?

Unfortunately no. The "Print Immunizations" option is hard coded to show brand name only. I would recommend putting a request into "recommended improvements" on the main screen (found under "Help"). This will get the request to the development department.
