How's this for a small office server? Dell 7820 - it's a "workstation" but uses C621 server chipset and Xeon Gold 61xx server processors.

Server 2019 not officially supported, but all components look good.

Has 2 NVMe bays connected to the motherboard so you can run very fast u.2 ssds (optane 905) or m.2 ssds. Why do official "servers" not have this or charge obscene amounts for NVMe?

You should move forward with a machine that supports Windows 11. Windows 10 is getting close to End Of Life.
