My practice has a large backlog of orders in Amazing Charts. How can these be deleted or signed off?

Ted,

The order tracking in Amazing Charts doesn't work as far as I know and we don't track orders in our office.

That being said, hit CTRL-O from the main screen. Left click an order (where you want to start deleting) then scroll down to the bottom. Holding the Shift Key and left click the last order you want to "delete". In the "Update Order Status" window select "completed" and click UPDATE.
