Well this weekend I spent quite a bit of time Virtualizing our Amazing Charts server, it seemed to go pretty well.

I chose VMware ESXi 5.0 (free) and used VMware Converter to do the Physical to Virtual conversion.

I also virtualized a document server that we have in the office that runs the updox connector and a few other connectors for the local hospital to get reports, etc.

Now it is all running on on DL160 G6 Server w/ 12GB RAM and Mirrored Disk.

All in all the solution seems to be working quite well.
Amazing Charts is running along side our Domain Controller on 2008 R2 Standard 64Bit.

With Microsoft Security Essentials acting up despite added exceptions, etc... we decided to go for a more robust antivirus solution and chose Sophos Small Business. It has a central management console and all computers update from the main server which fetches the definitions. This should be a lot better for bandwidth concerns, plus one spot to manage all desktops AV. We can even run reports to see what computers were infected, etc.
