I agree. I don't know why, but I feel bad for those who go with Windows Server 2008 Standard. SBS is just so much more useful and user friendly. And, get a server because you need a server to run your network efficiently not to run SQL Server.

Yea, it gives the small business users a corporate appearance when you have your own exchange email. Gmail and yahoo address don't seem very professional, imo. (Also, you don't have to worry about HIPAA since you own the Exchange server and the data) Sharepoint services and what not. Unfortunately for those Server 2008 Standard Users, they have to pay a premium for Exchange, Sharepoint, and SQL. With premium edition of SBS, we get the SQL Server Full (Small Business edition, 75 user limit who's going to top that anyways) for a much lower price. Also, we don't need to buy separate CALs for everything. We even get a copy of server 2008 in the premium version. I like the idea of the premium add-on for SBS 2011 should I ever need the full edition of SQL.

You couldn't be more correct. SBS is the only way to go. And, you even get Susan Bradley's blogs on SBS. Let's put it this way. Is Susan tells Microsoft to come out with SBS 2012, they would.
The only thing is you can own a domain name and use it for email, although Exchange is much better as you can do intra-office email (which does not go out to the Internet, backups and a host of other things you couldn't do without Exchange. The other thing is there are a couple of ways to journal email so you can archive emails from all users (after telling them this if you wish). I believe it is already a HIPAA regulation, but I may be wrong.
