Does anyone know how to retrieve data (office encounter) if during the visit you loose power or loose internet signal? We are having internet issues with our provider and our physicians have had to redo so many office notes this week because they had the chart open at the time and lost everything! They are so frustrated!

If you are using AC in an office with a server in house it should not matter that internet goes down. How is your office set up ?

so are they working remote/on a remote server such that loosing connection looses the note?
If there was a power loss, that speaks to having a UPS (Uninterrupt-able Power Supply) that the server is plugged into to prevent the server dropping power suddenly. If you want the client systems to not drop off at power loss, they need UPSs as well, along with the network switch that connects the office.
If for the server, look for a UPS that has connection that signals the server to shut-down upon power loss, so that the server shuts down gracefully.

Good points Indy. To reinforce that idea for Robbye, we do that too. We have a very large powerful UPS for the server, another very large one for the router/firewall, network switch, VoIP switch and VoIP power over ethernet.
We have small ones for all of our desktops. The laptops that I use in the rooms of course all have built in batteries.
While some UPS's will only power the equipment for 15 minutes, it protects us during those annoying power flickers that might last one second, and protects the equipment from power surges. They give us enough time to power down safely. Our UPS's are also configured to power down the equipment once battery is 5-10% remaining.
