i'm not sure if you need to update your database if you're using v3.6.9 (on webpage, it says if you used a prior version)...

I don't think you need to tune the database if you are using 3.69. Only if you are using an earlier version.

Anyone have an idea how of how stable the 3.6.12 beta is?

We're running the one before it, 3.6.11 and it's been pretty good. Yesterday and today our P2P server was a little slow, but it hasn't triggered any bug reports, which is one of the main ways I measure stability. The problematic Financial section has warned me on occation that while sitting at the main server that I've lost connection with my database, saying that it might be a wireless router or network thing though; which is pretty funny seeing that I was working at the main machine.

No I did not. So far all seems OK. As I read the instructions only folks who had versions older than 3.69 had to be concerned about running the tuner, which I did awhile back. If you are running 3.69 then you probably ran the tuner some time ago as well, so you should be covered. But tuning is not usually such a big deal. It tends to go smoothly, just don't mess with it, let it do it's thing. Make a good, possible two copies of back-ups of your old data base just in-case, so you can restore to the old one, just in-case. But AC even makes an extra back-up in your AC folder as it runs the tuner or Amazing Utilities, just in-case as well.
