I keep my server (on my peer to peer) clean... other than some shared files (documents) and AC, there ain't much there. So imaging the server is not an issue for me.
One big advantage to imaging the server is that you don't need AC to restore. Meaning it's doable at anytime of the day. Also, it's way less time consuming than resetting up all the folder shares, IP addresses, etc.
