I tried Updox last year, before the EMR link to AC was fully functional. I found it very slow, with a steep learning curve. I think there is a new version, however, so I'm also interested in how people are using it.
I think Updox will have trouble beating the features and price of PaperPort combined with a network fax, over the long term. I receive 500 faxes about every 10 days, so my cost for Updox would be at least $55/month.
