wondering how to complete coding the encounter for a visit after I signed the chart; seems like the time stamp follows the subsequent point when you open the signed chart; I must be missing something in the process?

If you need to change the coding, you simply Right click on the patient's name, go down to "pull superbills" This will open the superbill area where you can either modify a previous superbill or even open a new one.
Time stamp is somewhat unimportant. Think of a paper billing process. Of course it is done after the fact. The issue is timely filing.
