Here's a little background on my idea for a Server Structure.
We have a Dell T310 box running SBS 2011 Essentials with 8gb ram, and 2 300GB Sata 10k drives (Raid1). We would purchase 10 CAL's if we implemented a terminal server, and 8gb more ram.
EDIT: Here's my thinking: I purchase the 'premium add-on' for SBS 2011, then install the 2008R2 OS as a virtualized server (to use only for its terminal services) (buy an extra RAID set for 2008R2 to live on?)
We don't need exchange or sharepoint.

Ah. Or this.
install 2008r2SP1 on the physical machine, installed the Hyper-V role.
Installed SBS2011 as a virtual guest.
Installed 2008r2Sp1 as a virtual guest with RDS & SQL Server Roles.

We don't need exchange or sharepoint. Just make sure your processor is capable of handling the load. SBS Essentials is pretty light. RAM is cheap. Hard drives are at all time high right now. I don't think you get Exchange and Sharepoint unless you get SBS Standard.

Isn't just purchasing Windows Server 2008 R2 cheaper than going with the premium add-on if you don't need SQL Server 2008?

Yup, it sure is. Plus 8GB of Dell Ram and 2x 500GB Hard Drives, and 5 RDS CAL's. Comes to about $2k (all unofficial quotes of course  )

We are still doing our evaluation, but The TSPlus option is appealing. One thing that may be of use in a heavy remote model is either desktop or just app access, along with non-windows (Mac/Linux/andoird) clients.
