One option is to outfit one cheap computer as a backup server - just make it with a cheap server software (EBAY server 2000) and a different name - use it as one of your daily backups and when your real server goes down - change the name of the backup server and use it. The only problem is the number of computers and a license to match that many users, although I bought Server 2003 Enterprise with 75 CAL for 600.00 on eBay. Otherwise use P2P and a backup NAS drive - 1 terabyte is available for under $300.00.
