Excess RAM just sits there in Essentials. The main reason I say not to go overboard isn't price, but the page file. A lot of people are moving to small capacity SSDs and if you have a 128GB SSD with a 32GB page file and a 32GB hibernation file. Yikes. Just keep that in mind should you decide to get low capacity drives. Or adjust the size of your page file.
